Homemade limoncello, part 2

If we ever needed proof positive that the wheels are coming off the cart over here at Figs, it must certainly be that I was late in executing the second phase of my limoncello recipe. Ten days late! I put work, my family, and volunteer work for Sophie's school over limoncello in priority! What is wrong with me??

But I finally got it done the other night. If you're starting at the beginning, you can read here. And if you're Angelina, you're already with me.

We left off here,

with my lemon peels and vodka being left to stew in a dark, cool place for 40 days (except mine when 50).

For the second part of the process I added 4 cups of sugar to 5 cups of water and brought to a boil and then cooked for about 5 minutes to thicken just a bit. After this cooled, I added it to the vodka and lemon peel (the whole thing needed to be added to a larger jar) along with another 750 ml. bottle of vodka. Now it needs to sit for another 40 days. So here we are now, in the laundry room, which is sort of dark but probably not dark enough. I'll have Husband put it down in his basement with the wine, so it will be cool as well.

Remember that news story a while ago about some celebrity appearing on a morning talk show still showing the effects of the limoncello he had imbibed the night before? Danny Devito, maybe? Well, no kidding. I feel tipsy after taking a whiff of this! But in spite of the alcohol content, the fragrance of the lemons does come through. Back in 40 days, when we'll raise an iced glass!

Mmm...limoncello...

I had some made by my friend in Japan and it is mega strong! My mom and her friend apparently got VERY tipsy when they had it once because they completely underestimated the strength of the limoncello.

PS. You DID make my day! Thanks!

AH! It was Danny De! And apparently he was out with George Clooney drinking limoncello all night. I mean, YES, I'm slightly ashamed to know all this, but hell, I DO know it, so I'll just admit it.

Mmmmm....your grown-up lemonade looks delish.
